Method
Peel and dice the apples into small cubes.
Add the apples to a pan and cook for about 5 minutes.
Add the butter, brown sugar, cinnamon, cornstarch, and lemon juice. Stir well and cook over medium heat for 10–15 minutes, until the apples soften and the mixture thickens.
Remove from the heat and let the filling cool slightly.
Preheat the oven to 375°F.
Place the puff pastry sheet on a parchment-lined baking sheet. Spoon the apple filling down the center, making sure not to overfill it. You may have some filling left over.
Cut about 10 strips on each side of the pastry, then fold the strips over the filling in a crisscross pattern.
Brush the top with egg yolk, then sprinkle with a little brown sugar and crushed or sliced almonds.
Bake for about 20–25 minutes, or until the puff pastry is puffed and golden.
Serve warm with vanilla ice cream and a dusting of powdered sugar, if desired.
Dilruba’s tips
All ovens vary, so keep an eye on the pastry as it bakes to avoid overbaking or underbaking.
Let the apple filling cool slightly before adding it to the puff pastry so the pastry stays flaky and doesn’t get too soft.
Don’t overfill the pastry, the extra apple filling can be saved and served on the side with ice cream.
The puff pastry sheet I used was approximately 9¾ × 10½ inches.
