Method
Season the salmon with the Cajun seasoning, lemon pepper seasoning, garlic powder, paprika, salt, and olive oil.
Let the salmon marinate in the refrigerator for a couple of hours.
Place the salmon on a baking tray and bake at 375°F for about 20 minutes, or until cooked through.
Heat the butter and olive oil in a large pan. Add the diced onion and cook until softened.
Stir in the sun-dried tomatoes and cook for another minute.
Pour in the heavy whipping cream. Add the Cajun seasoning, paprika, garlic powder, and salt. Stir well and let simmer gently.
Add the spinach and cook until wilted.
Stir in the cooked pasta and mix until coated in the sauce.
Top with the baked salmon, Parmesan cheese, and lemon slices.
Dilruba’s tips
If you have the time, let the salmon marinate for a few hours for extra flavor. This step is completely optional.
Make sure the onions are fully softened and cooked through before adding the next ingredients. This helps build a richer flavor.
For serving, top with freshly grated Parmesan cheese and extra lemon slices, if desired.
