Method
Cook the sliced sucuk in a pan over medium heat for about 2–3 minutes, then remove it from the pan and set aside.
Slice the simit in half and place it cut-side down in the same pan. Toast for 1–2 minutes.
Add the sliced cheese between the two halves of the simit, followed by the cooked sucuk, then close the simit.
Crack 2 eggs into the center of the simit.
Cover the pan and cook until the eggs are set to your liking and the cheese has melted, about 5–7 minutes.
Finish with chili oil and fresh parsley, then serve warm.
