Method
Separate the egg whites and yolks into two bowls.
Whisk the egg yolks with 3 tbsp sugar until pale, thick, and creamy.
Add the mascarpone and gently mix until smooth.
Slowly mix in 1–2 shots of espresso.
In a separate bowl, whisk the egg whites with 1 tbsp sugar until foamy and soft peaks begin to form.
Gradually fold the whipped egg whites into the mascarpone mixture, a little at a time, until combined and airy.
Place the mascarpone filling in the refrigerator for about 10–15 minutes while you prepare the croissants.
Melt the butter in a pan over medium-low heat and add the brown sugar.
Place the whole croissants into the pan and press them down with a heavy pan or another heat-safe object to flatten them.
Cook for about 3-5 minutes per side, watching carefully so the brown sugar does not burn, until the croissants are flattened and lightly caramelized.
Remove the croissants from the pan and let them cool slightly.
Place one flattened croissant on a serving plate and spread a generous layer of mascarpone filling over it.
Add chocolate shavings and a light dusting of cocoa powder.
Place the second flattened croissant on top.
Add another layer of mascarpone filling, followed by cocoa powder and more chocolate shavings.
Finish with fresh figs and chocolate pieces on top.

Use pasteurized eggs since the tiramisu filling contains uncooked eggs.
Chill the mascarpone filling for 10–15 minutes before assembling so it firms up slightly and is easier to layer.
Keep the heat at medium-low when flattening the croissants, since the brown sugar can burn quickly.
Let the croissants cool slightly before adding the mascarpone filling so the cream does not melt.
