Method
Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
In a large bowl, whisk together the melted butter and granulated sugar.
Add the eggs and whisk until combined.
Pour in the milk and whisk again.
In a separate bowl, whisk together the flour, baking powder, and vanilla powder.
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Toss the diced strawberries with 1 tablespoon of flour, then gently fold them into the batter along with the white chocolate chips.
To make the streusel topping, whisk together the flour, brown sugar, granulated sugar, and salt. Pour in the melted butter and mix until a crumbly texture forms.
Divide the batter evenly among the muffin liners and generously sprinkle the streusel topping over each muffin.
Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool for a few minutes before serving.
