Method
Preheat your oven to 375°F (190°C).
Cut the peaches in half and remove the pits.
In a small bowl, combine the melted butter, cinnamon, and sugar until well mixed.
Brush the butter mixture generously over each peach half, making sure to spoon a little extra into the center where the pit was.
Arrange the peaches cut-side up in a baking dish and bake for about 20 minutes, or until they are tender. The peaches should be soft when pierced with a toothpick.
Serve each warm peach half with a scoop of vanilla ice cream, then finish with crushed walnuts and fresh mint.
Dilruba’s tips
Every oven is a little different. Mine runs a bit hotter, so my peaches were perfectly tender after about 20 minutes.
Start checking the peaches around the 20-minute mark and bake until they're soft when pierced with a toothpick.
Feel free to swap the vanilla ice cream for whipped cream or Greek yogurt if you prefer.
Chopped pecans or pistachios would also be delicious as toppings.
These are best enjoyed warm, right out of the oven, while the ice cream slowly melts over the peaches.
