Cheese Stuffed Potatoes (Kumpir)

Method
Boil the potatoes for about 15 minutes.
Wrap each potato in parchment paper, then wrap again with aluminum foil.
Bake at 400°F (205°C) for about 30 minutes, or until the inside is completely soft.
Cut open the potatoes and mash the inside with 1 tablespoon of butter per potato.
Add as much shredded mozzarella cheese as desired and continue mixing until melted and creamy.
Fill the potatoes with pickles, corn, olives, and the seasoned beef franks.
Top with ketchup and mayonnaise.
Serve warm.
