Method
Slice the chicken breasts into strips or cutlets of even thickness.
In a shallow bowl, combine the flour, salt, black pepper, Cajun seasoning, and paprika. In a second bowl, beat the eggs. Place the crushed cornflakes in a third bowl.
Dredge each chicken piece in the seasoned flour, dip it into the beaten eggs, and finish by coating it evenly with crushed cornflakes.
Preheat the air fryer to 375°F (190°C). Lightly spray the breaded chicken with olive oil and arrange in a single layer. Air fry for approximately 12–16 minutes, flipping halfway through, until crispy and cooked through. The chicken should reach an internal temperature of 165°F (74°C).
Add the chopped romaine lettuce, croutons, ranch dressing, Parmesan, salt, and black pepper to a large bowl. Chop some of the cooked chicken into bite-sized pieces and add it to the salad. Toss everything together until evenly coated.
Spread approximately 1 tablespoon of ranch dressing over each tortilla. Add a generous portion of the chicken Caesar salad mixture, followed by additional pieces of crispy chicken, French fries, and grated Parmesan. Fold in the sides of each tortilla and serve immediately.
Enjoy!
