Method
Preheat your oven to 375°F (190°C) and lightly grease a baking dish with oil.
Cut each brioche bun in half. Using your fingers, gently press into the center of each half to create a small pocket for the filling.
Place ½ slice of American cheese into each bun half as the base.
Heat the olive oil in a large pan over medium heat. Add the diced onion and cook until softened.
Add the diced sweet peppers and continue cooking for 2–3 minutes until slightly tender.
Add the cubed chicken thighs and cook until fully cooked through.
Season with the salt, black pepper, paprika, and mustard. Stir well to coat the chicken evenly.
Pour in the heavy cream and mix until combined.
Add the shredded mozzarella cheese and stir until completely melted and creamy.
Spoon the chicken mixture into each prepared bun half.
Top each one with more shredded mozzarella cheese.
Arrange the stuffed buns in the prepared baking dish and bake for about 20 minutes, or until the cheese is melted and lightly golden.
Garnish with freshly chopped parsley.
Dilruba’s tips
Any sturdy burger bun will work.
Be careful not to overfill the buns, as the cheese will melt and expand while baking.
Bake until the cheese is golden and bubbly for the best flavor and texture.
Feel free to add mushrooms, jalapeños, spinach, or your favorite vegetables to the filling.
Cooking times may vary slightly depending on your oven and the size of your chicken pieces.
