Chocolate Chip Cookies with Vanilla Ice Cream

Method
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a medium bowl, beat the softened butter, light brown sugar, and granulated sugar until smooth and well combined.
In a separate large bowl, whisk together the flour, baking powder, baking soda, salt, and vanilla powder. Set aside.
Add the egg and mix until incorporated.
Gradually add the dry ingredients to the wet ingredients and mix just until a cookie dough forms. Do not overmix.
Fold in the chocolate chips.
Cover the cookie dough and refrigerate for about 1 hour.
Remove the dough from the refrigerator and divide it into 12 cookies.
Bake the cookies in two batches, placing 6 cookies on the baking sheet at a time and leaving space between each one.
Bake each batch for about 12 minutes, or until the edges are set and the centers still look slightly soft.
Let the cookies rest on the baking sheet for about 5 minutes before moving them.
Serve warm with a scoop of vanilla ice cream.

Make sure the butter is softened to room temperature, but not hot.
Chill the cookie dough for about 1 hour before baking. This helps the cookies hold their shape and keeps them thicker.
Bake 6 cookies at a time so there is enough space between them.
The centers may still look slightly soft when you take them out. They will continue to set as they cool.
For the best result, serve the cookies warm with vanilla ice cream.
