Method
Cut each potato into 3–4 thick slices.
Place each slice between two chopsticks or skewers and make thin cuts across the potato without cutting all the way through.
Flip the potato over and make diagonal cuts from one corner to the other to create the accordion effect.
In a small bowl, mix together the olive oil, Cajun seasoning, paprika, garlic, and salt.
Brush the seasoning mixture generously over the potatoes.
Bake at 400°F (205°C) for about 25 minutes, or until golden brown and crispy.
Remove from the oven and top with Parmesan cheese and fresh parsley.
Serve warm.
