Method
Slice the chicken breasts in half if needed to create thinner cutlets.
Season the chicken with the salt, paprika, and mustard.
Pour in enough milk to completely cover the chicken and add the rosemary.
Cover and refrigerate to marinate for at least 24 hours. For the juiciest chicken, marinate for up to 2 days.
Prepare three separate bowls with flour, beaten eggs, and crushed cornflakes.
Coat each piece of chicken in flour, then dip it into the eggs, and finally coat it with the crushed cornflakes.
Place the coated chicken onto a baking tray and drizzle lightly with olive oil.
Bake at 375°F (190°C) for about 25 minutes, or until golden brown and fully cooked.
Spread mayonnaise onto each bun.
Add the Caesar salad.
Place the crispy chicken on top.
Finish with freshly grated Parmesan cheese and serve immediately.
