Crispy Feta Egg Breakfast Bagel
This Crispy Feta Egg Breakfast Bagel combines so many good textures in one recipe. You have a warm toasted bagel, creamy avocado, crispy feta cheese, soft eggs, and pine nuts toasted in chili oil.

Method
Slice the bagel in half and toast both halves cut-side down in a pan over medium heat until golden and slightly crispy. Remove from the pan and set aside.
Mash the avocado and spread it evenly over both toasted bagel halves.
Add ⅓ cup of crumbled feta cheese to the pan and spread it into a small circle. Let the feta cook for about 1 minute, then crack an egg directly over the center. Cook until the feta becomes golden and crispy around the edges and the egg reaches your preferred doneness. Repeat with the remaining feta and second egg.
In the same pan, add the pine nuts and chili oil. Toast for 1 minute, stirring frequently, until the pine nuts are lightly golden.
Place one crispy feta egg on each bagel half. Spoon the chili oil and toasted pine nuts over the eggs, then finish with fresh parsley.

Keep the heat around medium when cooking the feta so it has time to become golden and crispy without burning.
Watch the pine nuts closely while toasting them because they can brown very quickly.
Add more or less chili oil depending on how spicy you want the bagel.
For the best texture, assemble and serve the bagel immediately while the feta is still crispy and the bagel is warm.
