Method
In a bowl, whisk together the eggs, milk, cinnamon, vanilla powder, sugar, and a pinch of salt until well combined.
Dip each slice of brioche bread into the mixture, making sure both sides are fully coated.
Melt 1 tablespoon of butter in a large skillet or flat pan over medium heat. If the pan becomes dry while cooking, add a little more butter as needed.
Cook each slice for about 4–5 minutes per side, or until golden brown. The exact cooking time will depend on how thick your brioche slices are.
Stack the three slices of French toast on a serving plate.
Top with crushed graham crackers, fresh blueberries, crushed pistachios, and a light dusting of powdered sugar.
Add a scoop of vanilla ice cream on top and finish with a generous drizzle of maple syrup.
Serve immediately while the French toast is warm and the ice cream is slightly melting.

Measure the toppings to your heart's desire.
If your slices are thicker or thinner, adjust the cooking time as needed.
Keep an eye on the French toast while it cooks and move the slices around the pan occasionally to help them cook evenly.
Cook over medium heat; if the heat is too high, the outside can brown before the inside is fully cooked.
