Method
In a small bowl, combine the lukewarm water, yeast, and sugar. Let it sit for about 3–4 minutes, or until bubbly.
Meanwhile, in a large bowl, mix together the flour and salt.
Pour in the yeast mixture and mix. Add the olive oil and continue mixing until a sticky dough forms.
Cover and let the dough rest for about 2 hours.
Once the dough has risen, use a spatula to fold it into itself about 30–40 times.
Transfer the dough to a well-oiled baking tray and gently spread it out.
Cover and let it rest for another 40 minutes.
Using your fingertips, create dimples all across the dough.
Drizzle generously with olive oil and add your favorite toppings. I used rosemary, olives, peppers, cherry tomatoes, and flaky sea salt.
Bake at 425°F (220°C) for about 20 minutes, or until golden brown and crispy on top.
Let it cool slightly before slicing and serving.
