Add the lobster tails, celery, chives, mayonnaise, Dijon mustard, lemon zest, lemon juice, salt, black pepper, and paprika to a large bowl.
Gently mix until the lobster is evenly coated. Add a little more mayonnaise if needed, but avoid adding too much.
Lightly trim the sides of each brioche bun, if desired.
Melt butter in a skillet over medium heat. Place the buns cut-side down and toast until golden.
Rotate the buns as needed so they toast evenly without burning, then flip and toast the opposite side.
Fill each toasted bun with the lobster mixture.
Garnish with extra fresh chives and serve with potato chips.
