Method
In a shallow bowl, whisk together the eggs, milk, cinnamon, vanilla powder, sugar, and salt.
Dip each slice of brioche into the egg mixture, making sure both sides are coated.
Melt the butter in a pan over medium heat. Add the brioche slices and cook until both sides are lightly browned. Remove from the pan and set aside.
Slice the banana and add the slices to the same pan. Cook for a few minutes, flipping as needed, until softened and caramelized.
Spread peanut butter on one slice of French toast and strawberry jelly on the other, then place the slices together.
Add a small spoonful of peanut butter to the center of the French toast and sprinkle crushed peanuts on top. Arrange the caramelized banana slices around the center.
Finish with powdered sugar and a drizzle of maple syrup.
Dilruba’s tips
Try not to soak the brioche for too long or it can become too soft and difficult to flip.
Keep the heat around medium so the outside has time to brown without cooking too quickly.
For the bananas, use one that is ripe but still firm so the slices hold their shape while caramelizing.
Cook the banana slices for 2–3 minutes, flipping halfway, until softened and caramelized.
